About Saltbush Billy Mutton

Most people think of mutton as a cheap, low-quality by-product of the wool industry. Something like a six-year-old-plus, cast-for-age Merino wether — or perhaps a broken-mouthed old ewe from the back of Hay with five lambs and four droughts behind her.

Saltbush Billy mutton is actually a premium product — in some ways closer to beef than the very “lamby” flavour of supermarket suckers.

Usually our premium mutton is either:

a) A two-year-old, four-tooth wether that escaped being mustered as a two-tooth hogget by hiding in the saltbush; or

b) A four-tooth or six-tooth, two-to-three-year-old ewe in absolute prime condition, but culled because she didn't successfully fall pregnant and raise a lamb.

Choose from any two of our Classic, More Chops, Steaks & Cutlets, or Rack ’n’ Roll Roasts side cut packs.

See photographs and descriptions of all our Cut Pack Options.

No payment is required when you order. We will send your invoice once the carcass weight is confirmed.
