Looking for a better way to buy beef?
We source premium grass-fed heifers and divide each carcass into eight shares, giving each customer a genuine cross-section of the animal — from eye fillet and scotch fillet through to roasts, slow-cooking cuts and mince.
Our beef is traditionally dry aged by a country butcher for two to three weeks before being cut, packed and delivered.
We don't raise the cattle ourselves. After trying beef from a range of different cattle, we settled on grass-fed Angus-cross heifers, usually Angus × Hereford, from north-east Victoria as consistently providing the eating quality we're looking for.
We select young — but not too young — heifers, generally 18 to 24 months old, and source them as close as practical to the small country abattoir we use. We don't buy feedlot cattle, males or particularly flighty breeds, and we avoid processing during hot weather.
We generally select heifers with a carcass weight around 250–280 kg. Because we don't know the exact carcass weight until the animal is processed, the final price varies.
At $18 per kg cwt, your 1/8 share will generally cost approximately $563–$630, including delivery. As a guide, a share from a 260 kg carcass will cost approximately $585.
From each side of the cow, each cut of meat is divided into four portions as equally as possible. If one share receives slightly less of one cut, the butcher balances it with slightly more of another. This means every 1/8 share receives a fair cross-section of the whole carcass.
Each share is cut and cryovaced into convenient kitchen-ready portions. You can also choose whether to keep the roasting cuts as roasts or have them cut into BBQ steaks.
A 1/8 share is roughly comparable in volume to a large lamb or hogget — about two sides of Saltbush Billy hogget.
As a guide, the meat should fit on about two shelves of a family upright freezer, not including the broth bones.
Each 1/8 share receives a portion of all the major cuts from the carcass, including:
The heifer is processed at a small country abattoir, then transported to our butcher's cool room where the beef is dry aged for two to three weeks. Our butcher then cuts, packs and cryovacs each 1/8 share. Your beef is delivered to your door in a PrimeSafe-registered refrigerated van.
Our beef has already been dry aged for two to three weeks before packing, so we recommend freezing any meat you won't eat within a couple of days of delivery. Cryovacing helps protect the meat, but it should not be treated like long-life supermarket cryovaced beef.
Simply place your order and we will contact you. Once the heifer has been processed and the carcass weight is confirmed, we will advise you of the exact cost of your 1/8 share.
First-time beef customers are then asked to pay a $200 deposit, with the balance payable before delivery. Returning customers do not need to pay a deposit.
